How pan sizes work
A full-size pan is the standard unit. A 1/3 pan is one third of that area, a 1/6 pan is a sixth, and so on. The numbers in the diagrams below are those fractions. Larger fractions (2/3, 1/3) suit bulk items like lettuce, cheese or sliced meats. Smaller ones (1/6, 1/9) suit toppings you use in small amounts, such as olives, onions and sauces.

Tips for choosing a layout
- List your toppings and sort them by how much you use of each.
- Put the busiest items closest to where the cook stands.
- Keep pans no deeper than 6 inches so the lid closes properly.
- If your menu changes often, pick a model with a mix of pan sizes.
