Sandwich prep table, Mega Top or pizza prep table: which one do you need?

- Sandwich/salad prep tables keep toppings cold on a pan rail with storage below.
- Mega Top models hold more pans in a deeper, wider top for high-volume lines.
- Pizza prep tables add a large cold work surface for stretching and topping dough.
- Count the pans you need on the rail and the storage you need below before you pick a size.
A prep table keeps ingredients cold and within arm's reach, so cooks can build orders fast and food stays at a safe temperature while you work. Sandwich, salad and pizza prep tables look alike from across the room, but they are built for different jobs.
Sandwich and salad prep tables (standard top)
A refrigerated pan rail on top holds cut toppings, proteins and sauces in food pans, with a cutting board along the front and refrigerated storage with doors or drawers below. This is the classic layout for sandwich shops, delis, salad bars and general kitchens. It is a good fit when you need a compact station that holds a moderate range of toppings.
Mega Top sandwich/salad prep tables
A Mega Top is the same idea with a larger top, a deeper and wider pan rail that holds more pans (and usually room for taller ones). Choose it when you have a long list of toppings or a high-volume line and want everything within reach without a second station.
Pizza prep tables
A pizza prep table adds a deep, cold work surface at the front for stretching and topping dough, with a rail of toppings behind it and generous refrigerated storage below for dough boxes, cheese and meats. If you make pizza, flatbread or large-format items, it is the one to get.
| Standard top | Mega Top | Pizza prep | |
|---|---|---|---|
| Best for | Sandwiches, salads, general prep | High-volume, many toppings | Pizza, flatbread, large items |
| Pan capacity | Moderate | Highest | Moderate, with a large work surface |
| Work surface | Cutting board at front | Cutting board at front | Deep cold work surface |

How to decide

- A long topping list or high volume: a Mega Top
- Making pizza or flatbread: a pizza prep table
- Tight on space: a 27-inch model is the most compact

Frequently asked questions
What is the difference between a standard top and a Mega Top?
A Mega Top has a larger pan rail that holds more pans and often taller ones, while a standard top is more compact. Mega Tops suit high-volume lines.
Can I use a sandwich prep table for pizza?
You can store and top pizza ingredients on one, but a pizza prep table has the deep cold work surface and storage that make building pizzas practical.
What pans fit in a prep table?
Standard food pans in fractional sizes (1/9, 1/6, 1/3, 2/3). See the pan layout guide for the combinations by model.
