Key takeaways
  • Store food by risk: ready-to-eat on top, raw proteins below by cooking temperature.
  • Leave space for air to circulate. An overstuffed unit cannot hold temperature evenly.
  • Label everything with a name and date and rotate with FIFO.
  • Keep a clear layout so staff can find items fast and keep the doors open less.

A well-organized refrigerator is safer, wastes less food and saves time. Staff find what they need quickly and spend less time with the door open. Here is a simple system that works in any kitchen.

Start with a clean slate

Empty the unit, throw out anything expired or spoiled and give it a proper clean. See our guide to cleaning a commercial refrigerator. It is the perfect moment to decide where everything will live from now on.

Organize by food safety

Store items top to bottom by the temperature they need to be cooked to, so raw juices never drip onto food that will not be cooked again.

  1. Top: ready-to-eat food, produce, sauces and prepared items
  2. Next: seafood and whole cuts of meat
  3. Next: ground meat
  4. Bottom: raw poultry

Do not overload it

Cold air has to circulate to keep every shelf at temperature. Leave a little space between containers, do not push food against the back wall or the fan, and do not block the vents. If the unit is always packed to the brim, it is probably too small for your needs.

Use the right containers

  • Use food-safe containers with tight lids, in consistent sizes that stack neatly
  • Use shallow pans for hot foods you are cooling
  • Keep everything off the floor of the unit
  • Cover or wrap food so odors do not transfer

Label everything, rotate with FIFO

Put a label on every container with the item name, the date it was made or opened and the use-by date. Place new stock behind older stock and use the oldest first. This one habit reduces waste more than almost anything else.

Create zones

Assign each shelf or section a purpose: dairy, produce, prepped items, proteins, sauces. Consistent zones mean everyone knows where things go and can spot at a glance what is running low. A simple shelf map taped inside the door helps new staff.

Loading a freezer

  • Freeze food in flat, labeled packages that stack and thaw evenly
  • Keep items away from the walls and fan so air can move
  • Date everything and use older stock first
  • Open the door as little as possible and close it fully

Check temperatures

Keep a thermometer in each unit and check it every shift. See safe food storage temperatures for the numbers.

Frequently asked questions

Where should raw chicken go in the refrigerator?

On the bottom shelf, below everything else, so juices cannot drip onto other food.

How full should a commercial refrigerator be?

Full enough to be efficient, but with room for air to move between items and around the fan. If it is jammed, the unit may be too small.

What is FIFO?

First in, first out. New stock goes behind older stock, and the oldest is used first.
